Quick and Easy Meal!

Pasta has always been, hands down, my favorite food. You don’t grow up in an Italian family without consuming your weight in carbs weekly.

On that note, I wanted to share a super simple recipe that I make often for our family. Even the kids like the sausage and noodles from this one! Hope you enjoy!

1 lb. fettuccine

1 package (5 links) Italian sausage

2, 10-oz. boxes of organic spinach

1 bulb fresh garlic

Garlic salt

1 container of fresh pecorino romano cheese

Remove casing from sausage. Break into pieces and put in pan with olive oil and 2-3 crushed cloves of fresh garlic. Cook through and brown on the outside.

Steam 2 boxes of spinach along with 2-3 cloves of crushed garlic. (I also sprinkle a bit of olive oil over spinach while it’s steaming. This is optional.)

Boil pasta, rinse in hot water, add a touch of olive oil and work it through. Then put steamed spinach and cooked sausage on top. Sprinkle with a generous amount of pecorino romano cheese, and…

ENJOY!
